Welcome to my deepest and most affectionate love affair: FAT BALLS. If you have yet to sink your teeth into one of these tantalizing treats, I am so excited for you to finally try them out. These are one of my favorite on-the-go snacks, mid-afternoon pick-me-ups, or just a smoothie bowl/yogurt bowl/ANYTHING bowl topper. I have been eating a high fat diet for a while now, and I have never felt better. Fat helps to keep you satiated for longer, and keeps your cravings at bay. For me, this was huge. I am a HUGE snacker (like, every two hours there better be something at my fingertips for me to munch) and was also experiencing gnarly cravings that I was too weak to overcome. Once I upped my intake of healthy fats (we are talking avocados all day every day, nut butters, hummus, coconut oil, etc.) I have felt significantly better and am able to go for hours on end without getting hungry.
All that to say, I appreciate any snack I consume to be packed with a good portion of them fats! Hence, my love for the fat ball. This morning for instance, I was taking a 9:30 yoga class. I don’t like going on an empty stomach, but I also know there is nothing worse than being overly full when you’re entering into your down dog. All my yogis out there are shouting a loud “amen” as they read this. So, about an hour and a half before class, I grabbed one of these almond joy fat balls, and made myself a matcha. And you better believe my matcha had some of those healthy fats in it too (I add about a TBS of coconut butter–life changing. It makes it super creamy & frothy & filling). And those two things carried me through my yoga class and made me feel like I was on top of the world.
Another thing I love about fat balls is how incredibly versatile they are. You can honestly throw whatever nut or seed that you have on hand and flavor it to your liking so you can make your perfect dream fat ball. I adapted this one from the ever reliable coconut fat ball because I have been CRUSHING on almond extract. So I made this from the nuts I had on hand, threw in some almond extract, some Trader Joe’s chocolate chips (because DUH) and these Almond Joy Dream fat balls were born. And may I just say, these could be my absolute favorite fat balls to date. (I also made some brownie bite balls too that are the chocolate lovers’ fat ball dream). Anyways, get creative and spice up your fat balls any which way you like! But for those of you who are dreamin of these almond joy babies, go no further. Peep the recipe below, and happy rolling!
- 1 cup unsweetened coconut flakes (+ ¼ cup for rolling)
- ½ cup coconut oil, melted
- ¼ cup pepitas
- ¾ cup raw almonds
- ¾ cup raw cashews
- ½ cup semi-sweet chocolate chips
- 2 T maple syrup
- 1 T almond extract
- 2 T flax seeds
- 2 tsp cinnamon
- ⅓ cup almond milk
- Add all of your ingredients to a food processor or a high speed blender and blend until you get a dough-like consistency.
- Refrigerate the mixture for an hour for easier roll-ability. You can skip this step, but it will be more difficult to roll.
- Roll your dough into bite-sized balls, and then roll those into the remaining coconut shreds.
- Place your rolled balls into an airtight container and place them into the freezer.
- For optimum enjoyment, remove balls and let sit for a couple minutes before consuming.
