If you are looking for a nutrient-dense & deliciously refreshing recipe to make for your current summer vibes, here is your answer. As you can probably deduce from all my crazy smoothie pictures on my Instagram, I LOVE coming up with exotic and fun smoothie combinations. Many times, I will find a fun ingredient that I want to incorporate, and then find flavors that compliment it. Because I eat smoothies almost every day, I try and pack as many nutrients into them as I can. This smoothie bowl was inspired as I was walking down the produce isle of Whole Foods when the deep purple plums caught my eye.
I’m not typically one to buy plums, but today they sounded like just the ticket for a tangy afternoon snack (or as it so happened, an extravagant smoothie bowl). There are so many nutritional benefits to plums such as their high fiber content, regulation of smooth digestive system functioning, as well as containing anti-oxidants, vitamins (many coming from b-vitamins which we LOVE!), & minerals such as potassium, fluoride, & iron.
To add to this delicious base, I added:
mangos [high in vitamin A, copper, & anti-oxidants]
bananas [high in potassium, fiber, tryptophan, & weight-loss aid]
spinach [anti-inflammatory, anti-oxidants, vitamin K, & phytonutrients]
dates [high in fiber, potassium, iron, & energy production]
chia seeds [calcium, healthy-fats, & anti-oxidants]
flax seeds [omega-3 essential fatty acids, fiber, anti-oxidants, & anti-inflammatory]
as well as a pinch of lavender, for a surprising zing.
I blended this all up with some water, and poured it into a bowl as I prepared my toppings. The toppings just happen to be my favorite part. To this one I obviously added fresh plum, as well as:
Purely Elizabeth grain-free spicy fig granola [free of refined sugar & packed with superfood seeds & energy storing medium chain fatty-acids]
goji berries [anti-oxidants, trace minerals, fatty acids, & 18 amino acids]
cacao nibs [magnesium, fiber, anti-oxidants, & iron]
And there you have it. And believe me when I say that it tasted even better than it looks. You may be thinking that the ingredients sound a little odd, but don’t take my word for it–try it out for yourself! And don’t feel like you can’t make it if you don’t have all the ingredients. Add whatever you have on hand and get creative. Enjoy!
- 1 fresh plum
- 1 frozen banana
- 1 cup frozen mangos
- 1 cup spinach
- 2 tbs chia seeds
- 1 tbs flax seeds
- 1 tsp culinary lavender
- 2 dates (or to desired level of sweetness)
- ~1 cup water (more or less depending on consistency preference)
- Blend all your ingredients in a high speed blender.
- Pour into desired bowl and top with your favorite toppings! I topped mine with: ¼ fresh plum, ¼ cup granola, sprinkle of cacao nibs, & goji berries!
- Chow down!
