Alright, this has to be one of my all time FAVORITE breakfast bowls I have made. If you haven’t noticed already, I am a huge fan of yogurt bowls. Being sensitive to dairy, I stay away from all dairy-related products. However, I have found that plain, non-fat, greek yogurt does not bother my stomach! The production process of greek yogurt actually removes a lot of the lactose, which so many of us are sensitive to. Not to mention it has tons of probiotics which are not only helpful in digesting lactose (and just digestion in general), but are also key in maintaining a healthy gut. And who doesn’t love a healthy gut?
Thus, yogurt has been a saving grace in my life! Not only is it my only dose of dairy I really get in my diet, but it is also super healthy and great for digestion. I try to eat it about 2X a week, so as not to overdo it, but to ensure that I am getting all of its nutritional benefits! That being said, I like adding variety into my very routine breakfast selections. One of my favorite things to do is to buy a certain ingredient (here being the pomegranates) and then incorporating it into as many different recipes as possible.
The fun ingredient of the week was pomegranates, obviously, hence this delicious bowl! I bought the poms for a festive New Year’s Eve cocktail, and then started adding them to just about everything. Pom seeds have so many incredible health benefits, as well as being delicious and adding a hint of beauty to any and every meal! They are great for immunity, having 40% of your daily vitamin C. They also are a healthy heart support, as they help to reduce blood pressure, and are also very high in fiber! I added them to my smoothies, my oatmeal, my yogurt (obvi), and even my salads!
- 1 cup nonfat plain greek yogurt
- 1T chia seeds
- ½ sliced banana
- 2T pomegranate seeds
- 1T almond butter
- 2T unsweetened coconut flakes
- ⅓ cup granola (I use Purely Elizabeth banana nut)
- Sprinkle of cinnamon
- 1 tsp maca powder (optional)
- 1 scoop collagen peptides (optional)
- Add your yogurt to desired bowl.
- If using maca & collagen, mix it into the yogurt before adding the rest of the ingredients.
- Top with the rest of the ingredients.
- Chow down!
